I infused some 209 Gin with the tea for 30 minutes to start. The tea is fresh-tasting with a subtle straw flavor, so I made a version of the classic pre-prohibition Clover Club cocktail, which normally calls for raspberry syrup. But I wanted to use strawberry with the tea and citrus so a slight variation:
1.5 oz gin
1 egg white
3/4 oz fresh lemon juice (I used Meyer lemons - delish)
3/4 oz strawberry syrup
Add all ingredients to shaker; dry shake for at least 10 seconds. Add ice to shaker, shake an additional 10 or so, strain into your glass(es).
