Tiki the Snow Away

For this auspicious January Instagram event, I wanted to do Blue Hawaiian Jell-O shots, which I did. But I also did this jumbo one that I like even more. I’ve said it before but I’m basically a 5-year-old who can drink 😃. A Blue Hawaiian is traditionally made with rum, blue curaçao, creme de coconut, and garnished with a maraschino cherry.

 

Soooo...  I bought a bunch of unflavored gelatin and went to town.

Bottom layer:

In a medium bowl, add 1/2 cup cold water + 2 packets unflavored gelatin.  Wait 1-2 minutes then add boiling water.  Stir one minute to dissolve, stir in 1 can coconut creme.  Pour over maraschino cherries, let set for about an hour.

Blue layer:

Combine 2/3 cup blue curacao and 2/3 cup water in medium saucepan, sprinkle with gelatin.  Allow gelatin to soak for 1-2 minutes.  Heat over low heat, stirring constantly, untill jello is dissolved.  Allow to cool just a bit, then layer on top of first layer.  Refrigerate for another hour.

Yellow layer (you can't see this one as well in the photo because SOMEONE didn't let the blue layer set long enough):

Combine 2/3 cup pineapple rum and 2/3 cup pineapple juice in medium saucepan, sprinkle with gelatin.  Allow gelatin to soak for 1-2 minutes.  Heat over low heat, stirring constantly, untill jello is dissolved. Allow to cool just a bit, then layer on top of first layer.  Refrigerate for another hour.

I added a pineapple ring up top since my layers didn't separate so well.

 

Enjoy!  Get a spoon and jiggle this boozy jello!
